Spanish Paella

A traditional Spanish favourite with a long history. This paella combines chicken, seafood, chorizo sausage, rice and Spanish herbs & spices for a highly satisfying Valencian feast.
Ingredients
- 1 medium chicken
- 1 onion, finely chopped
- 1 cup Spanish rice
- 1 chorizo sausage, chopped
- 2 arege tomatoes
- 1 tbsp olive oil
- 250 gm prawns (peeled) or your choice of seafood
- 500 ml chicken stock
- 1 400ml tin cannellini beans
- 100 gm green beans, chopped
- 1 capsicum, chopped
- 2 garlic cloves, crushed
- 1 chilli, deseeded and chopped
- 1 tsp smoked paprika
- 2 tbsp fresh coriander, chopped
- 2 lemons, chopped into wedges
Method
- Chop the chicken into pieces, heat the oil in a large saucepan and cook the chicken for 3 \u2013 4 minutes until golden brown. Remove and drain on paper towels.
- Add the onion and chorizo, cook for 1 -2 minutes. Add the rice and paprika, cook for a further 2 minutes, stirring occasionally.
- Add the tomatoes, capsicum, garlic, chilli, followed by the chicken stock.
- Over medium heat, boil, then simmer for 15 minutes. Then add the green beans, chicken, prawns, and beans and mix together. Cook for a minute.
- Add coriander and serve garnished with lemon wedges.
